What are Negi?
Negi (ネギ) refers to various types of long, thin onions, similar to the spring onions or leeks known in Europe. The white part tastes sharp and onion-like when raw, but when cooked, Negi becomes milder and sweeter in flavor. They are used in many Japanese dishes – from seasonings to grilled dishes, stews, stir-fries, and soups.
We use leeks in our recipe – whether you choose spring onions, leeks, or a type of Negi is up to your taste.
Typically Japanese - the Negi sauce
This simple sauce reflects the Japanese philosophy of creating complex and profound flavor profiles with simple ingredients. It is a staple in many households and restaurants in Japan, especially because of its ability to enhance the natural taste of dishes without overpowering them. The Negi sauce is an expression of Japanese cuisine, combining simplicity with depth and complexity. It is appreciated not only for its taste but also for its versatility. Whether in a traditional or modern dish, it always brings a touch of authentic Japanese cuisine to the table.
Grill pan Yakiyaki Pocchari from OIGEN
The Yakiyaki Pocchari Grill Pan by OIGEN, made of Japanese cast iron, is the ideal tool for preparing chicken wings with Negi sauce. Thanks to its unique properties, this pan elevates the simple dish to a new level.
The sliced leeks are placed directly on the bottom of the pan before the chicken wings are added on top. This is where the cast iron shines: it ensures even heat distribution, allowing the leeks to brown slowly, releasing their sweet, aromatic notes, while gently steaming and flavoring the chicken wings. The pan is then simply placed in an oven with a grill function to cook the meat evenly and perfectly caramelize the leeks.
Due to the pan's high heat retention, its temperature remains constant in the oven, ensuring even cooking. The grill pan's natural non-stick coating, enhanced by the patented Naked-Finish treatment, prevents sticking and makes cleaning easier after cooking.
Thanks to the removable handle and stylish trivet, the pan can be placed directly from the oven onto the table. The cast iron keeps the dish warm for a long time, allowing the flavors to be enjoyed before the food cools down.
