This Japanese chef's knife by Yoshimi Kato combines beauty and functionality in one masterpiece. The handle made of Japanese quince and a Rosewood ferrule, waxed and octagonal in shape, sits perfectly in the hand. The desire to use the Damascus blade for its intended purpose is immediately awakened. The approx. 170 mm long blade, a very good length for this beautiful chef's knife, is made from SG2 steel and many layers of Damascus steel. The renowned steel manufacturer Takefu Special Steel refers to the steel as Super Gold 2 (SPG2). It is a powder-metallurgical, stainless steel with some special features. Knife smiths and knife lovers particularly appreciate the homogeneous, fine structure, the high hardness of 63 HRC and the extraordinary stability or edge retention. The perfection of Yoshimi is also evident in this knife in the form of a perfectly balanced Bunka and an exceptionally clean finish.
