AUS-10

The AUS-10 steel has a carbon content of approx. 1.0 - 1.1 %. The blade hardness is approx. 60 HRC. It also contains components such as silicon, nickel and manganese to increase elasticity and toughness. All AUS steels are produced by the manufacturer Aichi Steel in Tokai. A proportion of molybdenum, vanadium and chromium protect the steel against rust.

The chef's knives with AUS-10 can be ground very sharp, are relatively corrosion-resistant and retain their sharpness for a very long time.
