The ZA-18 knife steel is a stainless steel of the highest quality. The carbon content is approx. 1.2 %, the blade hardness approx. 60 HRC. The chrome content of ZA-18 is relatively high at approx. 18 %. This makes the chef's knives rustproof and easy to maintain.
