Experience the exquisite world of Shincha Sae Midori, a top-class organically grown tea that enriches the KEIKO Shincha family. This special Asamushi tea is made from 100% Sae Midori, a noble cultivar, and seduces with its silky sweetness and full-bodied flavour reminiscent of luxurious Gyokuro.
Shincha, also known as the "new tea", marks the start of the tea year every year. The first tender, particularly aromatic leaf tips are harvested in the mild climate of Kagoshima as early as mid-April. This Kabusecha green tea is shaded for 7-10 days before harvesting. The shade ensures a high content of chlorophyll and other valuable ingredients, while bitter substances are minimised. The characteristic "shade flavour", called "Ooika", gives the tea its unique note.
The early harvest of Shincha Sae Midori guarantees a particularly high theanine content, which manifests itself in a sweet flavour and is particularly evident in the Sae Midori cultivar. As an Asamushi tea, it is only lightly steamed, allowing the dark green, shiny and needle-shaped leaves to retain their shape. The infusion is a clear hay green colour.

This tea comes from Yamaguchi-San from Satsuma-cho and unfolds its full flavour at an infusion temperature of around 65°C. Allow the first infusion to infuse for 70 seconds, 30 seconds is sufficient for the second infusion. The infusion time can be extended again for further infusions.
The Shincha Sae Midori is also convincing as a cold infusion. After a slightly longer infusion time, its wonderful flavour unfolds, which can be intensified by increasing the dosage according to taste.
