Aogami Steel, Aogami 1, 2, Super


Aogami steel (literally: Ao = blue, Gami = paper), i.e. the blue paper steel, is low alloyed, with a high carbon content of up to 1.4 % and proportions of chromium (approx. 0.3 %) and tungsten (approx. 1.1 %). This steel is traditionally used in Japan for the manufacture of Japanese knives. The advantages are excellent sharpness and good edge retention. The steel is high-maintenance as it is not stainless and can corrode easily if not properly cared for. Knives made from Aogami steel can be somewhat more difficult to sharpen than knives made from other types of steel.

The knives with Aogami are characterized by an exceptionally high sharpening potential, high cutting performance and durability.
