Tsuchime knives
Knives machined with Tsuchime
Hammering is a sensitive reworking of the knife and is called tsuchime. The advantage of tsuchime is an uneven surface, which creates air pockets between the blade and the material to be cut. As a result, the material to be cut does not stick as much and comes off more easily. Friction is also reduced and the knife glides better through the food. Special looks are scallops, squares or individual marks of the respective forge.
