Mainly for fish and meat one uses the large chef's knife Gyuto. The version Damascus knife Gyuto White Ebony comes from Kanehiro Hamono and was forged by Yoshimi Kato. An exceptional Damascus knife with a hammered Damascus blade and ergonomic handle made of the rare white ebony. The blade core is made of VG-10 steel, which is coated with a total of 34 layers of Damascus steel. Yoshimi Kato uses two different types of Damascus steel to achieve the optimal hardness-flexibility ratio. The unusual hammering of the blade in the upper part is not only a striking design feature, it has also shown very good anti-stick effects in tests. The knife shape Gyuto is very versatile and is suitable for accurate work such as fine slicing and filleting. The blade is slim, cutting - pulling as well as pushing - effortless. The blade length is about 21 cm and the chef's knife is, as usual with Kanehiro knives, perfectly balanced. Due to the intricate construction of the blade, it can be easily sharpened, but offers a high level of sharpness and stability. The exceptional Japanese chef's knife comes in a beautiful wooden box, which also serves for storage.
