Hand forged Japanese chef's knife Sujihiki from Nigara. The Sujihiki is a double-edged Yanagiba used for sushi, sashimi and fine slices of e.g. ham. The blade has a cutting core of Aogami super steel. Very distinctive is the hammering, individually done by hand, so that each knife is unique. The handle is made of high quality ebony (certified), octagonal and a ferrule of buffalo horn. Please note that the wood is naturally slightly different in color and grain. Nigara Hamono is a legendary name in Japan with a very long tradition of making swords and knives, dating back over 300 years. Cutting tools of the highest quality have come from this forge for 8 generations.
