Hand forged Japanese chef's knife Santoku 180 from Nigara. The Santoku, also called knife of the three virtues, is designed for cutting meat, fish and vegetables. The approx. 180 mm long blade was made of SG2 steel. The renowned steel manufacturer Takefu Special Steel calls the steel Super Gold 2 (SPG2). It is a powder metallurgy stainless steel with some special features. Knife smiths and knife enthusiasts particularly appreciate the homogeneous, fine structure, the high degree of hardness of 63 HRC and the extraordinary stability or edge retention. Very distinctive is the hammering, individually executed by hand, so that each knife is unique.
The handle of this exceptional knife is made of birch wood, finished with \"stabilized wood\". \"Stabilized Wood\" is a wood that has been impregnated with acrylic resin to greatly increase its resistance and durability. It is octagonal in shape and feels very good in the hand.
Nigara Hamono is a legendary name in Japan with a very long tradition of making swords and knives, dating back over 300 years. For 8 generations, cutting tools of the highest quality have come from this forge.
