Hand forged Japanese chef's knife Gyuto 240 from Nigara. The Gyuto, also called chef's knife, is intended for cutting larger pieces of meat, fish or vegetables. The approx. 240 mm long blade was made of SG2 steel. The renowned steel manufacturer Takefu Special Steel calls the steel Super Gold 2 (SPG2). It is a powder metallurgy stainless steel with some special features. Knife smiths and knife enthusiasts particularly appreciate the homogeneous, fine structure, the high degree of hardness of 63 HRC and the extraordinary stability or edge retention. Very distinctive is the hammering, individually executed by hand, so that each knife is unique.
The handle of this exceptional knife is made of birch wood, finished with \"stabilized wood\". \"Stabilized Wood\" is a wood that has been impregnated with acrylic resin to greatly increase its resistance and durability. It is octagonal in shape and feels very good in the hand.
