"Japanese water sharpening stone Atago, grit 1000"
Miyagoshi Seito Ltd.
The Miyagoshi Seito manufactory is located in Kyoto. A very good address, which is known for products of the highest quality in very different areas. Especially the craftsmanship from Kyoto enjoys an excellent reputation throughout the world. Among the many products of Kyoto, there is also a subject that is rarely associated with aesthetics and pleasure: the sharpening of knives. This is because Kyoto has a large supply of natural sharpening stones. And Kyoto is a stronghold for porcelain production, which is similar in some respects to the production of synthetic whetstones. About 80 years ago, Miyagoshi was founded and enthusiastically set out to surpass the quality of natural grinding stones. Today, Miyagoshi sharpening stones are regarded far beyond Kyoto and Japan, by many industry professionals and both professional and private knife enthusiasts, as outstanding handcrafted synthetic sharpening stones.
Japanese Water Stones by Miyagoshi
The vast majority of synthetic water sharpening stones from Japan are dried and not fired. Therefore, they are softer and release relatively much abrasive material during grinding. In principle, this is very good, but it also has a disadvantage: the grinding stones usually wear out faster. Miyagoshi has therefore opted for a different manufacturing method, the Vitrified method. Vitrified means vitrification. The mixture of ceramic binder and the abrasives is pressed at high pressure and fired at about 1300° Celsius for 36 hours. The final result is very resistant, even to alkali and acid, which is very important in industrial applications. Aluminum oxide, zirconium oxide as well as silicon oxide of the highest quality are used as abrasives. After these stones are watered, the grinding process creates a surface that provides an excellent grinding result. The feel of grinding is slightly different than conventional soft water stones. The knife guide seems more accurate and lighter. The dimensions of Miyagoshi sharpening stones are very good, usually 75 mm wide and 205 mm long, so that even large knives can be sharpened comfortably.
