Water stone from the Miyagoshi Seito manufactory in Kyoto. Made by vitrified process (vitrification) with very high quality abrasive aluminum oxide and zirconium oxide and ceramic high temperature binder. The average particle size is about 9.5µ, the grindstone is rather hard, very durable, wears little. With 1200 grit, the whetstone is in the upper range of medium grits and is very suitable for preliminary sharpening, especially for well-maintained knives. The water stones of Miyagoshi are both for hard carbon steels as well as for stainless steels best usable.

Japanese Water Stones by Miyagoshi

The vast majority of synthetic water sharpening stones from Japan are dried and not fired. Therefore, they are softer and release relatively much abrasive material during grinding. In principle, this is very good, but it also has a disadvantage: the grinding stones usually wear out faster. Miyagoshi has therefore opted for a different manufacturing method, the Vitrified method. Vitrified means vitrification. The mixture of ceramic binder and the abrasives is pressed at high pressure and fired at about 1300° Celsius for 36 hours. The final result is very resistant, even to alkali and acid, which is very important in industrial applications. Aluminum oxide, zirconium oxide as well as silicon oxide of the highest quality are used as abrasives. After these stones are watered, the grinding process creates a surface that provides an excellent grinding result. The feel of grinding is slightly different than conventional soft water stones. The knife guide seems more accurate and lighter. The dimensions of Miyagoshi sharpening stones are very good, usually 75 mm wide and 205 mm long, so that even large knives can be sharpened comfortably.

Care instructions

From time to time, for example, clean with a cleaning stone. Flatten if necessary. Wash thoroughly after each use and allow to air dry.
