Keep your water grinding stones flat to achieve the best possible result. Every now and then a sharpening stone must be flattened, otherwise an optimal sharpening result is not possible. So flattening your water sharpening stones is definitely important if you want to keep your knives in top shape. The Naniwa small dressing block is designed to maintain Naniwa water sharpening stones, but we can confirm that it works well for any water stone.

Water the flattening stone and the grinding stone before flattening. Place the water flattening stone on the work surface, you may use a pad or grinding stone holder to prevent it from slipping. Now you can rub the dressing block over the water grindstone until it is perfectly flat again.

A tip: If you draw several lines on the surface with a pencil before flattening your water grindstone, you can control the effect of the dressing block well. Once all lines have disappeared, the surface of your water grinding stone is ideally smoothed again.
