This Japanese paring knife by Yoshimi Kato combines beauty and functionality in one masterpiece. The handle made of Japanese quince and a Rosewood ferrule, waxed, octagonally shaped, fits perfectly in the hand. Immediately, the desire to put the damask blade to its proper purpose is awakened. The approximately 170 mm long blade, a very good length for the beautiful chef's knife, was made of SG2 steel and many layers of Damascus steel. The renowned steel manufacturer Takefu Special Steel calls the steel Super Gold 2 (SPG2). It is a powder metallurgy stainless steel with some special features. Knife smiths and knife enthusiasts especially appreciate the homogeneous, fine structure, the high hardness of 63 HRC and the extraordinary stability or edge retention. Yoshimi perfection is also evident in this knife in the form of a perfectly balanced Bunka and a distinctively clean finish.
