Hand forged Japanese chef's knife Gyuto Kiritsuke from Nigara. The Gyuto, also called chef's knife, is intended for cutting larger pieces of meat, fish or vegetables. The blade has a cutting core of Aogami super steel. Very distinctive is the hammering, individually done by hand, so that each knife is unique. The handle is made of genuine stag horn and feels remarkably good in the hand. This makes the knife slightly heavier and the center of gravity is slightly shifted to the rear, but it remains maneuverable and very comfortable to handle. Nigara Hamono is a legendary name in Japan with a very long, over 300 year old tradition of making swords and knives. For 8 generations, cutting tools of the highest quality have come from this forge.
