Shōgayaki - Recipe for Japanese Pork with Ginger

The recipe for Shōgayaki is a true Japanese classic, often part of elaborate multi-course meals. This dish is quite easy to prepare and tastes delicious due to the exotic spices used. 400g pork
2 tbsp flour
1 tbsp fresh ginger juice (grate fresh ginger tubers and collect the juice)
2 tbsp soy sauce
2 tbsp sake
2 tbsp mirin (Japanese seasoning sauce)
1 tsp sugar
2 tbsp oil (preferably rapeseed oil or olive oil)
black pepper
garnish with a spring onion, fresh herbs or fine strips of seaweed

Preparation
Step 1

First, the pork for this recipe is cut into very thin strips or slices.This is easier if it is slightly frozen.A sharp knife, as used for sushi, can also be helpful.When slicing, pay attention to the grain of the meat and always cut across the grain. If you don't have the confidence to do this yourself, you can have the pork cut into thin slices by a butcher for roasting. This is done super-fast and with the utmost precision using a slicing machine.

Pat the meat dry with some kitchen paper. Then pepper the strips on both sides and dredge in the flour.

Step 3

To prepare the delicious sauce for the recipe, mix the mirin, sake, soy sauce, sugar and ginger juice together.

Step 4

The oil can now be heated in a pan. It is hot enough when small bubbles form on a wooden stick held in the oil. Add the meat to the oil and sear it. As soon as it is crispy enough, the sauce is added to the pan to deglaze it.

Step 5

Then leave everything to simmer in the pan for a few more minutes over a medium heat. The dish is now ready and the pan can be removed from the heat.

Prepare the Side Dish

Traditionally, rice is served as a side dish for this recipe. It can be quickly prepared in a rice cooker. Alternatively, steamed rice is quick and easy to cook: 1 cup of rice is combined with 1.5 cups of water and a pinch of salt, brought to a brief boil. After that, the rice is simmered for about 10 minutes on low heat with the pot lid closed. Let it sit for a bit after turning off the stove, and the side dish is ready.
