Those who want to eat vegan can hardly avoid tofu. This food, also known as "soy cheese" or "bean cheese," has been known in Asia since ancient times. Originally from China, it spread throughout Asia and is now valued in Japan as a valuable source of protein and a basis for numerous dishes. It is available in many forms and processing stages, smoked, pressed, pickled, or freeze-dried. Tofu can serve as a substitute for meat and dairy products. Silken tofu plays a very special role in this.

What exactly is Silken Tofu?

Silken tofu refers to a tofu that can contain up to 80 percent water content. Normal tofu typically contains only about 50 percent water. Due to this high water content, the tofu becomes wonderfully creamy and soft. It is suitable as a base for a dessert, for fine cream, or even as an egg substitute. Put the remaining fruits and the tofu in a blender and mix thoroughly until a creamy mixture is formed. Season the dessert with sugar, agave syrup, or honey. Soup vegetables such as parsley root, parsnips, carrots, celery - chopped, fresh approx. one cup full or dried as soup greens approx. 2 tablespoons
200g silken tofu
1 bunch basil
1 Onion
1 tbsp olive oil

Peel and finely chop the onion, then sauté it in oil. Add the finely chopped soup vegetables and briefly sauté. Then add the peeled and diced potatoes. Fill with water until the vegetables are barely covered. Cook the soup over low heat until the potatoes are soft (about 15 to 20 minutes). Remove from heat and add the silken tofu and basil, saving a few leaves for garnish. Puree the cream soup with an immersion blender. Then season with pepper and a pinch of salt. Garnish with basil leaves and serve warm. Crispy fried croutons go well with it.

Silken tofu is an excellent egg substitute. It can be fried in a pan like scrambled eggs or used in baking. A delicious recipe is scrambled tofu with onions and mushrooms:

1 tbsp olive oil
salt, pepper, curry powder

For this preparation, first fry the onions and mushrooms with the olive oil in the pan. Meanwhile, mix the tofu with the spices until a creamy mixture is formed. Once the mushrooms are cooked, pour this sauce over them and fry briefly. Let the tofu scramble onto the bread and serve with a green salad or side dishes like cucumber, tomato, and radish.

Those who want to eat vegan will be amazed at how delicious scrambled tofu can taste! When frying tofu, care should be taken not to heat the pan too much to prevent the mixture from burning. In addition to silken tofu, there are firmer tofu varieties that are good for frying. Vegan tofu scramble can be wonderfully combined with tomatoes, bell peppers, onions, and other vegetables to transform it into a hearty main dish.

Baking with Silken Tofu

As mentioned earlier, silky tofu is not only suitable for cooking but also excellent for baking. In baking, vegans replace one egg in the dough for cakes and other baked goods with approximately 75 g of silken tofu. When heated, the cream begins to coagulate similarly to a chicken egg and acquires a firmer consistency. Baked tofu can therefore be the ideal base for a vegan cheesecake, a simple sponge cake, or others, which taste just as delicious as the originals.

400 g Silken tofu cream
200 ml cold espresso
175 g melted and cooled margarine
3 tbsp white sugar or cane sugar
40 ml Orange juice
25 ml Amaretto syrup
175 g biscuits or rusks
2 tbsp cocoa powder

Blend tofu, sugar, orange juice, and amaretto carefully with an immersion blender or in a stand mixer until smooth and fluffy. Gradually add the melted and cooled margarine and continue mixing. The mixture should become beautifully creamy and homogeneous. Spread the dough flat in a dish. Evenly distribute the cold espresso over it and let it soak in. Then add a layer of tofu cream. If desired, create multiple layers. For this dessert, the cream is always necessary as the final layer. Sprinkle cocoa powder evenly on top. The best way to do this is with a sieve, gently tapped over the tiramisu. Let the mixture rest in the refrigerator for at least four hours so that the flavors can blend perfectly. Serve the vegan tiramisu on a dessert plate as a dessert or as a small treat with coffee.
