Sushi and sashimi knife in a very noble design. The blade consists of a cutting core and 68 layers of Damascus steel. The cutting core is forged from Aichi Steel's ZA-18 stainless steel, the Aichi answer to Hitachi's famous VG-10 steel. ZA-18 differs from VG-10 by having slightly more chromium and a higher carbon content. This allows the steel to be forged 1-3 HRC harder. The damascus layers result in a very nice, but not too obtrusive pattern on the blade. The typical Japanese round handle is made of genuine Rosewood (Rosewood), the ferrule is made of water buffalo horn.The Kuyusakichi ZA Damascus Sujihiki is very light, very balanced and very sharp.
