The chef's knife Gyuto in a very noble design. The blade consists of a cutting core and 68 layers of Damascus steel. The cutting core is forged from ZA-18 stainless steel from Aichi Steel, the Aichi answer to the famous VG-10 steel from Hitachi. ZA-18 differs from VG-10 by having slightly more chromium and a higher carbon content. This allows the steel to be forged 1-3 HRC harder. The damascus layers result in a very nice, but not too obtrusive pattern on the blade. The typical Japanese round handle is made of genuine Rosewood (Rosewood), the ferrule of water buffalo horn.
The Kuyusakichi ZA Damascus Gyutou is very light, very balanced and very sharp. It is very easy to guide and fits perfectly in the hand.
