Kiritsuke Gyuto of the knife series Zuiun Kiwami made of SPG2 steel. The blades of this sophisticated knife series are basically the same as the blades of the popular series Zuiun. In addition, the blades are equipped with a DLC coating.The sheath core is made of SPG2, Super Powder Gold 2 steel, an absolute premium steel from Takefu, Japan. It is characterized by very high hardness, high toughness, abrasion resistance its corrosion resistance. The Damascus blade is sharpened in a special process, corresponding to the sharpening of traditional Japanese swords. It is a slightly convex grind called Hamaguri-ha. The advantages are stability and exceptionally high cutting performance. The shape of the knives is also very special, it is called Kiritsuke and is characterized by the elegant tip. Kiritsuke means to cut open or also slit.DLC stands for Diamond like Carbon and consists of carbon atoms. The DLC coating is used in automotive engineering, toolmaking and electronic components where very high loads exist. It is as hard as a diamond, extremely wear resistant, scratch resistant and corrosion resistant. The beautiful black Damascus pattern of the Zuiun Kiwami knife series is thus permanently protected under normal use.The Zuiun Kiwami Gyuto has a blade length of approximately 210 mm.
