The hand forged damask knife Kyusakichi Gyutou has an absolute special feature to offer in addition to the beautiful appearance due to the mirror plating: The ultra-hard ZDP-189 stainless steel from which the cutting core was forged. This steel is an alloy specially developed for Hitachi cutting tools that can be forged to a hardness of HRC 67. This makes this steel the hardest we know of for knife making. At the same time, the steel is so resistant to rust that it can also be called stainless. This is made possible, among other things, by the 3% carbon and 20% chromium. The knife is characterized by a very high sharpening potential, the excellent edge retention and ease of care.
The cutting core is coated with a layer of Damascus steel and aesthetically enhanced with a Damascus mirror plating. Yoshida Hamono, the traditional forge with very long forging experience has successfully mastered the challenging task of processing the ZDP-189 perfectly. Unfortunately, the knives of the premium Kyusakichi line are only available in very small quantities with very long delivery times. We are very pleased about the partnership with Yoshida.
