These knives were forged by Itsuo Doi, one of the \"Dento-Kogei-shi\" award winners at Aoki. The knife is undoubtedly a masterpiece and only available in small numbers. This beautiful piece was forged traditionally, i.e. from carbon steel Aogami 2 and by hand. The shape is, for a Deba rather unusual, characterized by the typical Kiritsuke tip. Again traditional is the one-sided grind - here for right-handers - which makes a very precise handling possible. On the right, on the sharpened side, the upper part of the blade is equipped with a mirror polish. Ebony for the handle, buffalo horn for the ferrule, a blade spine of a good 6 mm and a weight of about 350 g. If you have this knife in your hand, the kitchen can quickly become a favorite room in the house or apartment.
\"Dento-Kogei-Shi\" are masters of traditional craftsmanship. This title is only given to Japanese craftsmen who have made a special contribution to their traditional craft and who also practice their craft according to the rules of this art.
The Genbu Deba Kiritsuke 180 is a versatile Deba, which is also called a Japanese cleaver. In no case should a Deba but be used striking, this can damage the blade significantly. To cut harder material, place the back of the non-wielding hand on the broad back of the knife and apply even pressure. The knife is supplied in the original box and a saya - blade protector.
