The chef's knife of the series Shichi is compact with the blade length of 200 mm and yet very powerful. Where the Santoku comes to its limits, the Gyuto connects directly, ideal for larger pieces of meat, fish or vegetables. The hammered blade not only looks very good, it is also quite practical in nature, as the cut material sticks less than with smooth, polished blades. Seki Kanetsugu uses VG-2 stainless steel encased in SUS410 for the blade core. This combination features high flexibility, durability and corrosion resistance. The blades are hand-ground on both sides with a 15° angle. Easy to clean is the 7-cornered handle made of pakka wood with Micarta ferrule, which also convinces with a very beautiful wood grain. The knife series Shichi is a very high quality entry into the beautiful world of traditional Japanese chef's knives.
