Sencha Kabuse Kirifuda
Sencha is the most widely drunk green tea in Japan. Over 70% of the green tea grown in Japan is sencha. The qualities of Senchas on the market are very broad and range from quite plain to very high quality. We came across our Sencha Kabuse Kirifuda while searching for the best Sencha in Japan - we have not found a better one. It comes from Japan's southern island of Kyushu, more specifically from the area around Kirishima in Kagoshima Prefecture. Kirishima is also the name of a mountain in the prefecture, a volcanic mountain. Volcanic soil, together with the subtropical climate, the many hours of sunshine, but also the fog, make up the special conditions that can produce such wonderful tea as this Sencha. The tea fields are located - very idyllic - in the mountains of Kirishima, about 600 meters above sea level. Here, in a small organic tea garden, grow the cultivars of our Sencha: Yabukita, Okumidori and Okuyutaka. Yabukita is a very popular cultivar in Japan, although it is quite delicate and organic farmers have to take great care of it. But it yields a lot of umami, which makes it worth almost any effort. The yields of the Cultivar Okumidori are mostly preferred only for Tencha, the green tea for Matcha, and for Gyokuro. So our Sencha Kirifuda benefits from a select choice. In contrast, Okuyutaka is a typical Sencha cultivar. This noble selection of cultivars, the restriction to the finest, most delicate tea leaves and buds of the first harvest and the careful and elaborate processing give the Sencha Kabuse Kirifuda the top place among our Senchas.

The nose is immediately full of umami - delightful. Umami is also determinative in the mouth, underpinned with a subtle, mild aroma and a balanced, fresh sweetness. Bitterness and astringency are foreign to Kirifuda. Overall, this tea is a refreshing, very flavorful green tea experience that is unparalleled in its full-bodiedness.

All plucking is done by hand, carefully inspected and sorted. To fully enjoy these rare green teas, you should ideally use soft water, filtered if necessary. You can achieve an increase in flavor if you boil the water in a genuine Japanese cast iron kettle - for the sake of your health, pay attention to the quality - and prepare the tea in a Japanese teapot made of clay or cast iron (Kyusu)
