When spring awakens in Japan it is time for the new tea, Shincha. Shincha is the very first variety to be harvested, before the first harvest - First Flash - there is the Shincha harvest, a pre-harvest. Depending on the weather, this pre-harvest starts as early as the beginning of April, but it must have been dry for a few days. April is the season of dense morning fogs, the air is full of humidity. While the fog hangs over the tea bushes, the already quite strong April sun fills the dormant tea buds with energy. For Gensen Tezumi, only the top two leaves are picked by hand. This is because only the softest and most delicate tea leaves, which must be processed immediately after harvesting, are used to create Super Premium Shincha. The tender leaves, so that they remain moist and fresh, are only steamed for a short time at low temperature. This gives the Shincha its incomparable aromas, reminiscent of a rain-soaked, lush green forest. Hand picking is the gentlest way of harvesting and is nowadays used only for the finest teas.

Freshness and umami are the two flavor factors that distinguish a Shincha. Of course, the tea does not taste identical every year, since the winter already affects the taste of shincha. But the tea makers have their tricks and above all a lot of experience to make their tea meet the high standards. The hand-picked Shincha Gensen Tezumi must have a remarkable quality. At the very least. It must be rich in nutrients, have a deep color, and taste fresh with lots of umami. Only then will it meet the tea makers' standards.

Like all early harvest green teas, shincha is very stimulating. The young leaves still have all the ingredients that give them and us strength. Shincha has a stimulating effect on the senses, albeit more gentle than coffee. However, the rich caffeine of the young tea leaves is bound to the catechins and thus far better tolerated than the caffeine in coffee. Organic Shincha Gensen Tezumi has a high content of catechins and antioxidants. Shading enriches especially amino acids, fatty acids and chlorophyll, as well as various minerals. which also provide the exclusive taste. Only small quantities of our rarities are harvested and produced each year. To fully enjoy these rare green teas, you should ideally use soft water, filtered if necessary. You can achieve an increase in flavor by boiling the water in a genuine Japanese cast iron kettle - for the sake of your health, pay attention to the quality - and preparing the tea in a Japanese teapot made of clay or cast iron (Kyusu).
