The bread knife has a special serrated edge, but the material is the same as the other knives in this series. The hammered blades not only look very good, they definitely have a practical advantage as the cut material sticks less than with smooth, polished blades. Seki Kanetsugu uses VG-2 stainless steel encased in SUS410 for the blade core. This combination features high flexibility, durability and corrosion resistance. The blades are ground on both sides. Easy to clean is the 7-cornered handle made of pakka wood with micarta ferrule, which also convinces with a very beautiful wood grain. The knives of the series Shichi are a very high-quality entry into the beautiful world of traditional Japanese chef's knives.
